Groundnuts, unlike popular myths, are full of nutrients and a great source of energy. Here are some fun groundnut-based recipes you can try out:
Chikki
Ingredients: Ground nuts roasted 100 gms - coarsely powdered, sugar 100 gms. Method: melt sugar add ground nut powder cook for a minute. Pour on a greased plate, roll when still hot, mark it, cool and take out the pieces.
Groundnut Salad
Ingredients: Raw ground nuts - 100 gms, cucumber chopped 1/2 cup, onion - 1 chopped, green chilies - 2 chopped, carrot grated 1/2 cup, coconut grated 1/4 cup salt and pepper to taste. Lime juice, coriander leaves little.
Method: In a large bowl mix above ingredients, serve immediately.
Groundnut Chaat
Ingredients: roasted ground nuts - 100 gms, sweet chutney 1 tbsp, pudeena chutney 1 tbsp, onion -1 chopped, green chilli-1, tomato 1 chopped, cooked and mashed, potato-1, coriander leaves, lime juice, sev, a little.
Method: In a bowl, mix all the ingredients, add dash of chaat masala, pepper powder, salt, jeera powder mix well, squeeze lime juice, garnish with coriander leaves and sev and serve immediately.
Groundnut Pakoda
Ingredients: Roasted ground nuts - 100 gms, gram flour 1 cup, rice flour 2 tbsps, ajwain 1 tsp, salt, green chilies 6 chopped, onions -2 finely chopped, coriander leaves little, hot oil 1 tbsp, oil to fry.
Method: Mix all the above ingredients, pour a spoon full of the above mix into hot oil (uneven shape) fry till crisp.
Groundnut biscuit
Ingredients: Roasted groundnut-100 gms, coarsely chopped, maida - 100 gms, dalda 100 gms, fine sugar 100 gms, milk 1 tbsp, baking powder 1/4 tsp.
Method: Sieve maida B.P. in a bowl. Smoothen dalda with sugar nicely. Add groundnuts, flour, 1 or 2 tbsp milk, mix to a medium soft dough. Keep in fridge for 10 minutes. Take out, knead lightly, divide into 15 portions, lay them on a greased baking tray. Pre heat the oven at 180°C. Place the tray in the oven, bake for 15 minutes or until brown. Cool. Store in airtight box.
