Rajasthan. The scrumptious main courses and desserts will take you on a trip to the land of palaces and deserts.
“The main purpose of this event is to bring a refreshing change in the menu especially for long-staying guests and patrons of our hotel,” says Udayshankar Shenoy, Kitchen Executive and the chef behind the Rajasthani
cuisine. The chef has strived to recreate the authentic flavours from the royal as well as the common man’s staple. “It is simple, flavourful and earthy,” opines he.
Vegetarians will develop a special liking for the Gatte Ki Subzi which consists of gramflour dumplings immersed in spicy yogurt gravy and the Panchkuta Shakh, a sweet and spicy curry of dried wild beans and berries. If you are a daal lover, then you cannot afford to miss Daal Panchmel made of five different daals. There is even Mungodi Methi
Mutter made of peas and fenugreek. For the lovers of meat, there is Maas Ki Kadi, a lamb-based yogurt gravy.
The chef recommended Laal Maas with a generous dose of Mathania chillies and Murgh Aur Makki Ka Soweta are a must try. All these are served with a choice of missi, bajre, makki ki roti and even steamed or unpolished rice.
How can one forget the mouth-watering Rajasthani desserts that follow? Whether you have a sweet-tooth or not, reserve space in your tummy for the lip-smacking Malai Ghevar, Lapsi (a kheer made with broken wheat and
jaggery) and Kulfi Falooda. Traditional Rajasthanis, even prepare Lapsi with camel’s milk. The USP of these desserts is that they are not too rich or sweet.
