Method
Wash the fish well and marinate with red chilly powder, turmeric powder and salt and keep it aside for 3-4 hours. Then add the egg, corn flour and tandoori colour to the marinated fish and mix well.Heat some oil in a 'kadai' and shallow fry the fish and keep aside.
For the seasoning:
In a thick bottomed pan, heat 1 tbspn oil. Add the ginger garlic paste and green chillies and saute for a minute. Then add the onion rings and curry leaves and saute the onions on a medium flame for 2-3 minutes. Add the shallow fried fish and cook for 2 minutes. Before serving, add the lime juice and garnish with coriander leaves and serve hot.
Green wrap fish
A healthy way of cooking fish where you do not need to use even 1 drop of oil.
Ingredients
Sear fish[cut into boneless slices]-500 gms; Coriander leaves-1 cup; Mint leaves-1 cup; Ginger-1 inch piece; Garlic-8-10 cloves; Green chillies- 4-5[to taste]; Coconut-a small piece; Juice of 1/2 lime; Red chilly powder-1 tbspn; Turmeric powder-1 tspn; Salt to taste; Plantain leaves for wrapping the fish and thread for tying.
Method
Wash the fish and marinate it with red chilly powder, turmeric powder and salt and keep aside for 3-4 hours. Grind together coriander leaves, mint leaves, ginger, garlic, green chillies, coconut, lime juice and salt to make a 'chutney''. Wash the plantain leaves and cut them into pieces big enough to wrap one piece of the fish. Take a piece of fish and apply a little of the 'chutney' on both the sides and place it on a plantain leaf. Fold the leaf so that the fish piece is covered properly. Tie the leaf with a small piece of thread and keep aside. Similarly wrap all the fish pieces and place them in a vessel which fits into your pressure cooker. Put some water in the pressure cooker and place the vessel with the fish pieces on a stand and cook up to 4-5 whistles. The fish is ready to be served.
