Most of us associate Italian food with pasta and so, for a change, The Oberoi decided to have an Italian food promotion of a different kind. Risotto, a Northern Italian rice dish often seems bland in comparision to the exciting looking pasta. It is true, that the traditional Risotto is subtle and looks like our common dishes such as the khichidi or the pongal but the Oberoi decided to do bring in some new flavours into this traditional dish. Says Chef Zafar, “The advantage with Risotto is that its a complete meal in itself. It has rice, meat, vegetables...you don’t need multiple dishes. As oppossed to what people think, making Risotto needs a lot of care and one must be beside the dish all the time.”
On the menu are six prominent risottos, both for vegetarians and non vegetarians. The vegetarians can start with the Artichoke, peas and spinach with goat cheese gratin risotto. This has a subtle flavour and makes a light meal. The non vegetarians can try the Roasted pumpkin and bacon with feta and rosemary or the Oak wood smoked chicken and porcini with herb jus. But two dishes stand out and are definitely worth a try. Morels with home made ricotta and Umbrian truffle oil has the strongest flavour and in fact tastes quite Indian.
The other must have is the Lemon grass risotto with Kaffir lime scented prawn and basil butter sauce. This dish strikes the perfect balance between the oriental and Italian cuisine.
Aromatic with the lemon grass and rich with flavour from the kaffir lime and the basil butter sauce, it is a treat for the senses apart from being interesting and unique. Tasting distinctly oriental and still a risotto, this is also for those who want to try something new.
