This is the season for field beans (avare kalu). Here are some recipes you can try out:
Field beans curry
Ingredients: Field beans (husked) - 1/2 kg; Potato - 2 big pieces; Tomato - 2 chopped; Black brinjal - 2 thick pieces; Oil - 2 tbsps
Paste: Coconut 1/2 cup, red chili powder 2 tsp, coriander powder - 2 tsp, turmeric 1/2 tsp, ginger garlic paste - 2 tsp, cinnamon - 2, cloves - 4, onion - 1 (Directly burn on flame peel the skin chop and use it), fried gram - 1 tbsp.
Seasoning: Oil - 2 tbsp, mustard seeds, onion - 2 chopped, red chilies - 2, curry leaves.
Method: Take oil in a cooker add above seasoning ingredients fry well, add tomato, potato, ground paste, fry well, add husked beans - 2 cups, water and salt. Pressure cook for one whistle. Open the cooker add brinjal cook till done.
Field beans rotti
Ingredients: Field beans - l cup, onion - 2 finely chopped, green chilies - 2 or 4 finely chopped. Oil Green chopped 1/2 cup, cumin seeds 1 tsp, turmeric powder 1/2 tsp, salt, oil as required. Rice flour-2 cups.
Method: Mix all the ingredients to semi soft dough with water. Divide into big ball size. Take one portion directly pat as thin as possible on dosa tawa, keep on gas, cook in medium flame, using oil cook both sides well. About to remove pour a spoonful of ghee and serve hot with "Carrot chutney".
Note: Keep 2 or 3 tawas to prepare rotti.
Field beans pakoda
Ingredients: field beans (de-husked)- 1 cup, coarsely grind in a mixie, green chilies - 4 to 6, finely chopped, cinnamon - 1 cloves - 2 (Powder), salt, onion - 1, finely chopped, coriander leaves - 1/4 cup chopped, besan - 1 or 2 tbsp, rice flour - 1 tbsp.
Method: Mix above ingredients, drop spoon full in hot oil, fry till crisp and serve hot.
Field beans masala rice
Rice - 1 1/2 cups, onions - 2 chopped, cinnamon - 2, cloves - 4, cardamom - 2, bay leaves - 1, tomato - 1 chopped, salt, oil and ghee - 4 tbsp, salt to taste, field beans - 1 1/2 cups, turmeric powder 1 tsp.
Paste: Green chilies - 6, ginger, garlic paste 2 tsp, 2 tbsp coconut - with water make paste.
Method: Soak rice for 10 minutes, heat oil and ghee in a cooker add whole masalas, onions, tomatoes, ground paste, field beans fry well, add rice fry, add 3 cups hot water, salt, pressure cook for 3 whistles, cool, lastly sprinkle pudeena coriander leaves and lime juice, serve hot with raita.
Mixed greens raita
Ingredients: Cucumber sliced - 1 cup, onion - 2 sliced -2, grated carrot 1, spring onion chopped - 1/4 cup, tomato -2 chopped, curds - 1 cup, salt. Paste: Green chilies - 1 or 2 coconut - 1/4 cup with water grind coarsely.
Method: Mix all the above ingredients, add salt mix well and serve.
