Cucumber Akki Rotti
Ingredients: 1.5 cups rice flour,
1 grated cucumber, 5-6 green
chillies (finely chopped), ¼ cup grated coconut, few coriander leaves, 1tsp jeera, salt as per taste, oil, water
Method: Grind coriander leaves, coconut, green chilies. Next, in a bowl, add rice flour with grated cucumber, ground mix, cumin/jeera, add salt.
Add little water, mix well to a soft dough. Keep it covered for 10 mins. Take 1tsp of oil, smear a tawa, take dough and spread on it. Keep this covered on medium heat. After a minute, add oil to the sides of the dough spread on the tawa to make it easier to remove when it is cooked evenly. If you prefer your rotti more crispy, leave it on a little longer. Serve hot with a chutney of your choice.
Carrot Akki Rotti
Ingredients: 2 cups of rice flour, 1 small finely chopped onion, 1 cup grated carrots, a handful of chopped coriander, a little grated coconut, 7-8 green chillies, 1tsp cumin seeds, 2 tbsp oil, salt to taste, 1 cup water (as required)
Method: In a bowl mix rice flour with chopped and grated vegetables, chilies, cumin/jeera, coriander leaves, coconut, and salt. Add warm water and mix well to a soft dough.
Keep it covered for 10 mins. Take 1tsp of oil, smear a tava, take dough and spread on it. Keep this coveed on medium heat. After a minute, add oil to the sides of the dough spread on the tawa, to make it easier to remove when it is cooked evenly. If you prefer your rotti more crispy, leave it on a little longer. Serve hot with a chutney of your choice.
Masala Akki Rotti
Ingredients: ½ cup rice flour,
4 finely chopped green chillies,
2 tsp of jeera and coriander
powder, 1 tsp garam masala, ½ tsp cumin seeds, 2 tsp red chili and rasam powder, ½ tsp turmeric powder, 1 cup finely chopped
coriander leaves, ¼ cup finely chopped onion, and salt as per taste.
Method: Mix the rice flour with all the ingredients and knead to form a soft dough. Smear a little oil on the tawa, take a small ball of dough and start to flatten it on the tawa, with your fingers, to make it flat. Add oil to the sides, cover, and
cook until it is done. Flip and let it cook on the other side. Serve hot with pickle or chutney of your choice.
Methi Akki-Rave Rotti
Ingredients: 1 cup of chiroti/semolina rava, 1 cup rice flour, a bunch of finely chopped methi leaves, a handful of chopped coriander leaves, 7-8 finely chopped green chillies, 1 tsp cumin seeds, 2 tbsp, salt as per taste, 1 cup water (as required), 2 tsp curds,
Method: Mix chiroti rava, rice flour with chopped and washed methi leaves. Add salt, chillies, cumin, seeds. Add water and mix well. Add the curds, and knead. Dough should be of medium softness; not too hard or too soft. Cover and leave overnight. Next day, take a tawa, and smear 1tsp of oil on it. Take some dough and spread it on the tawa.
Add a little water and flatten the dough. Keep this on medium heat. After a minute, add oil around the rotti, and cover the tawa with a lid and leave it on till it is cooked evenly. If you like your rotti more crispy, simply leave it on for longer. Enjoy it hot with butter and chutney or pickle of your choice.
[NOTE: To make another rotti, hold the pan upside down and run cold water all around it. Once the pan has cooled, you can make another rotti. Be careful while running water onto the hot vessel, as water will start sizzling as soon as it hits the pan.]
