Experimenting with flavours

Looks like Tina Jadav was born with the inherent talent to bake exotic cakes, pastries and other items. She never took any  course to learn the nuances of baking. After spending hours researching and understanding the process of baking cakes, Tina not only surprised herself but her family and friends by what she could do.

She believes in a healthy diet and a lot of experiment goes into making each of the cakes. She says that if she likes it, then she’s sure it would be liked by others as well. She throws in a lot of healthy fruits, nuts and ingredients to make sure the end result is not only less in fat but also healthy to consume.

Tina’s small joint, ‘Oven Treat: Cakes to Die for’ in Kalyan Nagar, is a popular place with families living in the vicinity visiting here and recommending it to their friends. Supporting her in all her endeavours is her husband Darshan Jadav who says even he is amazed by what Tina can churn out. “There’s a lot of research that has gone into what combinations work best and we constantly explore permitted food colours. The idea is not only to make the food look attractive but consumable as well.

For instance, the cashew cake has loads of nuts in it, which is healthy, and nuts are recommended in one’s daily diet,” he states. Among the dishes that are a must-try are ‘Banoffee pudding with mascapone frosting’, where the banana is slit and glazed with maple syrup before it is topped with cake batter. It is then baked with juice, rum-soaked banana and decorated with dulce de leche and mascapone cheese.

The ‘opera cake’ is the classic cake with multiple layers of almond sponge cake and topped with coffee meringue cream, chocolate sponge with gnash and apricot jelly. “The ‘humming bird’ where vanilla sponge cake is paired with banana, passion fruit and pineapple and topped with Italian meringue butter cream is popular,” explains Tina. The ‘orange almond biscotti’ is nothing but cake mixed with almonds and orange zest and baked twice. The ‘rainbow cake’ is another attraction. “It has all the colours of the rainbow. We use only permitted food colours and not artificial flavour enhancers,” explains Darshan.

The regulars swear by its taste. Rashmi Aiyappa heard about this eatery from a friend and came in to order a castle complete with Barbie dolls for her daughter’s birthday. “I asked them if they could create something that could fulfill my daughter’s fantasy of a Barbie doll castle house and they agreed almost instantly. They are unbelievably good,” she says.  The couple also make customised cakes.
