For a sweet retreat

Brightly coloured pastries and desserts sit cosy inside the display cases. The wide range of decorated sweets looks delicious and customers can’t resist ordering a slice or two. Aubree, the pastry place in Vyalikaval, has begun to generate much interest among the people of the area.

   Kishore Kumar, the owner, has been working on the idea of Aubree for the past five years but it materialised into a store just three months ago. He says Aubree means ‘Ruler of elf, goddess of impatience’ and he liked it because it is a more feminine name.

 “I came up with this concept of ‘Eat, Play, Love’ when I started this store. A good dessert, according to me, is something that gives you the ‘melting mouth’ experience and my pastries do that.” He is a chocoholic through-and-through. “I used to work with just chocolates before I decided to expand to pastries as well.”

One can get a wide selection of chocolates along with their desserts. 

He custom-make orders for his loyal customers. “I was asked why there aren’t any chocolates for Ramzan so I introduced four new chocolates into our selection,” says Kishore. 

The new additions are gulkand, pistachio, fig and a golf-shaped white chocolate.  Kishore takes feedback from his customers very seriously. “Feedback is really important; if you don’t have any, you can’t do anything.” He waits for their calls and makes sure he doesn’t let them down. 

He takes care to make his desserts different from the rest. “While most places use cream topping, we use cocoa butter spray. It might work out more expensive but it looks and tastes better.”
Most of his desserts are eggless and don’t have gelatin. “I’m a vegetarian myself so I try to make as many things without eggs. But products like macaroons, macarons and crème brûlée need egg. I also try to make a lot of my cakes without the sponge.” 

While this is the only store he has at the moment, he plans to expand further. He has a team of 11 chefs who work to fill the display case. “When I first started out, I made the mistake of being too dependent on my chef and that went wrong. Now I make all the recipes and the chefs follow them,” he says.

The favourites among customers are desserts such as the Belgium chocolate, baked cheesecake, baked yoghurt and new entries like the choco-raspberry cake. “I live in the area. I’ve always passed by the store but never had the time to walk in. Now I will definitely be coming back,” says Lekikha. 

Nandini and her son, Sonu, had also come for the first time and he liked the double chocolate mousse the best. Aubree is located at 41/1 Sri Sai, 2nd main, Vyalikaval. For details, call 9886117777.
