An 'eggs-otic' affair

I am from Shimla. I did my hotel management from the Institute of Hotel Management, Chandigarh. I then took industrial training at Oberoi Clarkes in Shimla and my first job training was in Kochi. I then worked at the Art of Living Kochi, where I was an Ayurvedic chef, and then moved to Bengaluru. I have worked in the City in three restaurants in HSR Layout, Bellandur and Whitefield. Now, I am a continental chef at Glen’s Bakehouse in Indiranagar.

The art of cooking interested me as a teenager, which made me choose hotel management. I just liked the art, but it was during my job that I fell in love with it.

Deeply passionate about cooking now, my first dish was a pasta that turned out pretty well. It has been four months since I joined Glen’s as a Continental chef and I love experimenting. I consider everyday as a training and get better each day. A chef has to be hard working and dedicated to bring out his best talent. Along with cooking, he has to be particular about cleanliness and hygiene. He should be a team leader as well as a team player. It is also important to maintain a standard of his own.

The biggest challenge of being a chef is the salary scale, but it is the passion that drives you. I am still young and I have achieved some success in one and a half years of my career. I have worked in three restaurants and I consider this as an add on. I look forward to working in Virginia in the US and see my career grow. As I am from Shimla, I am into music and I play the guitar. I also like photography.

Coming to the recipe, I have shared a classic American breakfast called ‘Eggs Benedict’. One of my personal recipes, it is an easy dish. The recipe is unique and has many variations. One can change the sauces and derive a new dish. You can also change the base and give it a new touch.

‘Eggs Benedict’ is one of those recipes which is simple in its appearance and easy to make. It is very light and healthy. You could easily change the ingredients as
per your requirement or availability.

I consider this as a versatile and delicious dish. This is an assembled dish as it has the English muffins and the hollandaise sauce from French. You can note that if you don't have English muffin or you find it hard to make, you can replace it with any other bread like multi-grain or brown bread. You can also cut roundels of a burger bun with a cutter.
