Have you anytime wished for a place where you could be alone or with friends and just lounge around without worrying about the bill that accompanies your pleasures? If yes, then your wish has been granted with the conceptualisation of a new and quirky concept started by ‘The Minute Bistro’ in Kasturi Nagar.

A newly opened cafe, it has become a talk of the town for the one-of-its-kind concept — Eat For Free, Pay For Time. So how does this work? The customers here can eat what they like from the menu without having to pay for the dish, but are required to pay for the time they spend in this cafe. So, if you happen to finish your meal within a minute and walk out of the cafe, all you have to pay is Rs 5!

Started by partners Enayat Ansari and Nikhil Kamath, this cafe serves three kinds of cookies, three kinds of cornflakes, desserts and special homebaked breads. For breakfast from 7.30 am to 10.30 am, they serve sausages, chef specials and a few egg based items. Says Enayat, “I owned another restaurant for almost two years and faced a lot of issues with the staff that affected the quality of food. There was more money spent on maintaining the restaurant than in providing quality service. I wanted to change this and return the value of money to the customers. So we charge Rs 5 per minute, ignoring what or how much the customer ate.”

With an impromptu concept of ‘pay per minute’ arising in his mind, he did a little bit of research and learnt about the success story of a similar restaurant in Russia. Without much ado, the trial version of the cafe started and there poured in a huge positive response. “People pay a rental for the cafe and not the food. Corporates and students are positive targets for this concept as it is better to have a chat with friends in the comfort of a cafe than on the roadside,” he opines.

With an upcycled, green ambience, the customers can spend quality time in the cafe — reading books, playing board games or just taking a break after work. The cafe has also kept the option open for ‘do it yourself cooking’ and he explains, “We have a chef and a helper who attend to the customers. Incase one prefers to make his/her own cup of coffee or toast a sandwich, they can try that too.” With not many risk factors involved in the business plan, this one-of-a-kind restaurant in the country is receiving franchise requests even from abroad  and “it is definitely going to stay for long,” says its proud owner.
