An ode to oats

Oats Baked Donuts

Ingredients: Around 1/3 cup of powdered oats; 1/3 cup of whole wheat flour; 1/3 cup of reï¬ned flour (maida); 1/3 cup of powdered sugar; 125 gm of low-fat yogurt (slightly sour); egg whites from 2 eggs; 1 tbsp of vegetable oil; ¼ tsp of vanilla essence; ½ tsp of baking powder. For glazing, 50 gm of chocolate and colourful sprinkles.

Method: Mix the flours, oats, baking powder and sift. Whisk together egg white, curd, oil, sugar and vanilla. Gently add the dry ingredients. Preheat the oven to 180 °C. Grease mini ring moulds and pour the batter. Bake for 10 minutes. Cool. For glazing, dip the donuts in melted chocolate and decorate with sprinkles.

Oats Apple Cinnamon Cake

Ingredients: A cup of oats; 1 cup of skimmed milk; ½ cup of unsweetened apple sauce; 2 tbsp of orange juice; ½ cup of brown sugar; 1 grated apple; 1 cup of buckwheat flour; 1 tsp of baking powder; ½ tsp of baking soda; 1 tsp of cinnamon powder and salt to taste.

Method: Preheat the oven to 200 °C. Soak the oats in milk for 15 minutes. Mix all dry ingredients. Squeeze out all the juice from the grated apple and add to oats mixture, with apple sauce and orange juice. Add another tbsp of orange juice if mixture looks dry. Pour the batter into a 9" greased pan and bake for 20 to 25 minutes.

Oats & Dates Pie

Ingredients: Around 20 gm of roasted and powdered oats; 20 gm of semolina (sooji); sugar to taste; 2.5 ml of oil; 5 gm of chopped dates; 1 tsp of lemon juice; 50 gm of peeled and grated apple; 15 gm of chopped walnuts and 2 tsp of boiling water.

Method: Mix the oats and semolina with sugar and oil. Mix apples, dates and walnuts. Add boiling water and lemon juice and stir till smooth. Preheat the oven (375 °F). Grease a baking dish. Spread half of the oats and semolina mixture in the dish. Top it with a layer of date mixture and cover with rest of the oats mixture. Bake for 35 to 40 minutes.  

Oats Spanish Omelette

Ingredients: A cup or 100 gm of oats; egg whites from 4 eggs; salt to taste; ½ tsp of pepper; 2 tbsps of skimmed milk; 1 small capsicum (ï¬nely sliced); 1 small onion (ï¬nely sliced); ½ small tomato (ï¬nely sliced); 2 mushrooms (ï¬nely sliced).

Method: Beat the egg whites, oats, salt, pepper and milk. On a low flame, pour half of the egg mixture and roll to cover the bottom of a non-stick pan. Sprinkle capsicum, onion, tomato and mushrooms on top and press gently. Cover the pan and cook for 1-2 minutes on low heat till vegetables get steamed. Turn the side and cook till light golden. Serve hot.
