JW Kitchen marks the 69th Independence Day with myriad, authentic flavours of traditional dishes from across the country. Chef Amit and his team have picked some lipsmacking cuisines from the four directions that range from delicacies from Kashmir to Kanyakumari.

The elaborate buffet is divided into two main sections, North and South, where the guests will be greeted with a variety of appetisers, main courses and desserts. The North section will be spread out in the alfresco area, and the South section will be designed indoors. One can enjoy the live counter and interactive counter when they walk to fill their plates.

“We wanted to capture the entire Indian theme with our cuisines. So we created a station that includes dishes from all sections of the country. The design is in such a  way that the dishes from the South will be vegetarian and the North will have the tandoors.

The menu will have an overall of fifty to sixty dishes,” says Chef Amit. There will also be a live cocktails section with the elaborate buffet spread. And to add to the fun element, there’s a special offer for the whole family, including a play area for children.
