Ragi Modak: Microwave ragi flour and salt for 2 mins, add boiled water gradually to make soft dough, shape into balls; cook ghee, sesame, coconut, jaggery for 3 mins, add cardamom, make filling balls; stuff into greased modak moulds, seal, steam in microwave for 5 mins, cool and serve.

Peda Modak: Microwave khoya, powdered sugar and cardamom powder to a microwave-safe bowl, cook on micro mode for 4 minutes, then cool slightly; shape into modaks using a mould or by hand, and finish with a garnish of cardamom seeds and pistachios.

Kaju & Cashew Modak: Mix sugar, cardamom, rose water and water in a microwave-safe bowl, cook for 3 minutes; add cashew powder, mix, cook again for 3 minutes, blend smooth, and shape into modaks while warm using hands or a mould, then set aside to cool completely.

Malai Modak: Mix paneer and condensed milk in a microwave-safe bowl, cook for 5 minutes stirring twice, cool slightly, and shape into modaks with hands or a mould.

Khoya Modak: Prepare modak stuffing in a microwave-safe bowl, cook for 3 minutes and let it cool. In another bowl, microwave water, oil and salt for 2 minutes, then add rice flour gradually, stir well and cook for 2 more minutes to make dough. Cool, cover with a damp cloth, shape dough with stuffing into modaks and steam in microwave over boiling water for 5 minutes. Cool and serve.
