Beet juice
Ingredients: 3 cups beetroot gratings, 1 cup carrot gratings, salt and lime juice to taste, jaggery powder to taste (optional), 2 cups water
Method: Blend the gratings to a smooth consistency. Strain it, and then add the rest of the ingredients. Mix well and serve chilled.
Beet salad
Ingredients: 3 cups beet gratings, 1 cup carrot gratings, 1 cup moong sprouts, 1/2 cup green seedless grapes, coconut gratings 2 tbsp, salt and lime juice to taste, and a few chopped coriander leaves
Seasoning: 2 tsp oil, 1/2 tsp mustard seeds
Method: Mix all ingredients in a bowl and season with mentioned ingredients. Mix well and serve.
Spicy beet curry
Ingredients: 2 medium beetroot, 2 tbsp coconut gratings, 1/2 tsp tamarind pulp (concentrate), sambar powder 1 tbsp, salt to taste, and a few chopped coriander leaves
Seasoning: 1 tsp oil, 1 tsp each of mustard seeds, urad dal, gram dal, a pinch of asafoetida, a few chopped curry leaves
Method: Wash, peel, and cube the beets and pressure-cook without water (drain the water if any, after cooking). Heat oil. Add the seasoning. Then add the beets and the rest of the ingredients. Sauté well for 2/3 minutes till dry and well-blended. Serve garnished with coriander leaves with rice/rotis.
Beet halwa
Ingredients: 4 cups beetroot gratings, 1/2 cup milk, 4 crushed phedas, 1/4 tsp cardamom powder, 1 cup coconut gratings, 1 ½ cups sugar, 2 tbsp ghee, a few almond slivers
Method: Cook the gratings in milk till tender and dry. Add sugar, coconut gratings, and pheda, and cook till well-blended. Add ghee and cook for a few minutes more till dry (non-stick consistency). Add cardamom powder and mix well. Garnish with almond slivers and serve.
Tips:
n Beet halwa can be used to fill samosas or as a spread on toast.
n Beets can be cooked whole, in pressure cooker and then peeled.
