n Glass noodles soaked -300 gms
n Carrot julienne-100 gms
n Beans sprout-100 gms
n Beans julienne-60 gms
n Bell peppers julienne-100 gms
n Basil leaves-3 gms
n Mint leaves-3 gms
n Coriander leaves-3 gms
n Spring onion julienne-100 gms
For dressing:
n Vinegar-50 ml
n Lemon juice-50 ml
n Brown sugar-70 gms
n Thai chilli-20 gms
n Lemon zest-3
n Light soya sauce-50 ml
Method:
n Blanch all vegetables and soak the glass noodles in cold water, drain water and mix allvegetables.
n Blend dressing ingredients together.
n Toss the salad in the dressing and serve chilled.
