The tri-colour flavours

Food has become such an integral part of one’s life that there’s always a special dish that ties together an occasion.

This time, uniting food and people is the Independence Day celebrations and its themed dishes. Food lovers and bakers around the city are excited to share their tri-coloured dishes and celebrate the day.

Amit Nanwani, the founder of ‘Samosa Party’, has created Independence Day-themed cupcakes, vanilla cake and sandwiches. He says, “We are an e-commerce venture where we provide food for corporates and social events. For this particular occasion, we decided to put together dishes that represent the flag.” The dishes are made with natural ingredients. “The sandwich is made with tomato chutney and cheese as one layer and green chutney and cheese for another with white bread. This one is particularly special because I used to get excited to have something like this even when I was in school,” he grins.

Bringing the cheesecake world together is Prebitha Abraham with her take on the flag colours. The home baker says, “It’s a special day for the country and I think celebrating the day with food is the perfect way to do so. I have prepared a tri-coloured cheesecake with no artificial colours.” She has used ingredients like kiwi fruit, oranges, cream cheese, condensed milk and gelatin. “Cheesecake is one of my favourites and it’s so simple to make as well. I am pretty proud of the results and can’t wait to wipe the baking tray clean,” she laughs.

For Deepika Sah, a baker at ‘Sweetalley’, it’s certain themes that interest her to bake. She proudly says, “I love my country no matter how many problems it may have. So as a baker, baking something to show my love for the nation felt right. Therefore, I have made a tri-coloured panna cotta infused with fresh orange zest and accentuated vanilla flavour. I’ve also made a tri-coloured and flavoured naked cake where you can taste the flavours of India in each layer — it has a beautiful hint of zesty oranges and minty notes.”

While everyone has their own reasons to celebrate the independence of the country, home baker Jeyadra S has another reason altogether. “I was in a dilemma whether to go to the gym or eat cheesecake. Of course, I chose to skip the gym and indulge in the succulent piece of cheesecake (smiles). But I had to make it in a way that my mother loves it — she doesn’t like added colours or flavours — so I kept the colour pastel and as nude as possible.”

Bringing the dish together was the key lime cheesecake layer for the green, vanilla cheesecake for the white layer and mango cheesecake for the orange layer. These were layered on the crunchy buttery biscotti and topped with mango jelly.

Whether the dishes are sweet or savoury, food lovers are uniting in showing their pride on this day. As Julia Child once said, ‘people who love food are always the best people’.
