Olive oil - 1 tbsp
Chicken/pork sausages
pork - 3
Onion, slices - 1
Garlic cloves - 2
Red wine - 100ml
Tomato purée - 1 tbsp
Chicken stock - 150ml
Handful of chopped fresh chives and parsley
Method
Heat the olive oil in a casserole dish or large saucepan. Add sausages and cook until browned on all sides.
Add onion and fry for 3-4 minutes. Add the garlic and fry for a further minute.
Add red wine, tomato purée, stock and simmer for 8-10 minutes, or until the sauce has thickened and sausages are
completely cooked through.
To serve, pour into a sering bowl and scatter with the chopped herbs.
