Flavoured frothy cool red!

 So, to break the monotony, here is a variety to choose from. All you need is some curd and a mixer or blender along with a few common and seasonal ingredients. Each recipe given here serves two.

1. Masala Lassi:    

1 cup curd
¼ teaspoon jeera powder
¼ teaspoon pepper
A pinch of garam masala powder
A pinch of hing powder
A pinch of black salt (optional)
2-3 ice cubes (optional)
Salt to taste
1 ½ glasses of water
Few finely mint leaves
Method: Put all the above ingredients except the mint leaves in a mixer/blender and whip up till frothy. Pour into glasses. Top the froth with mint leaves and serve.

2. South Indian ‘mor’:

Tamil Nadu is famous for its very diluted form of buttermilk,
 which is called ‘Mor’ in Tamil. A joke that makes the rounds is that ‘Lassi’ has less water and ‘Mor’ has more water.  The seasoning gives it a distinct, delicious South Indian flavor.
 ½ cup fermented curd
(slightly sour)
Salt to taste
For the seasoning:       ¼ teaspoon mustard
A few cut curry leaves (washed and dried)
1-2 finely cut green chilies
1-2 dry red chilies – broken into bits (optional)
A pinch of hing
1 ½ glasses of cold water
 ½ tablespoon oil
A few cut coriander leaves
Method: Run curd, water and salt in a mixer/blender. Heat the oil in a small seasoning pan on sim flame. Add the mustard. When the noisy spluttering stops, switch off the gas and immediately add curry leaves, both the chilies and hing. When done, strain off the oil and add the seasoning to the buttermilk. Add coriander, pour into glasses and sip away.

3. Summer Blush:  

3 cups fresh thick curd
2 tablespoons sugar
 1 glass full deseeded watermelon pieces
 2 cups finely cut deseeded water melon pieces
½ glass water
3-4 ice cubes   
Method: Mix/Blend curd, water, ice cubes, sugar and the water melon pieces (from the glass) till frothy. Add the tiny pieces of watermelon. Pour into tall glasses for a majestic drink.

4.  Khatti-meetthi Lassi:  

2 cups thick fermented curd
1 small sour raw mango grated (Totapuri preferably)
2-3 tablespoons sugar
1 glass water
2-3 ice cubes
Method: Blend all above ingredients till a smooth and frothy drink is ready.

5. Mango/Strawberry Lassi:

3 cups thick fresh curd
2 tablespoons Mango or
Strawberry Crush
1 cup finely cut mango or strawberry pieces
2-3 tablespoons sugar
1 ½ glasses of water
2-3 ice cubes
Method: Mix/blend curd, Crush, water, sugar and ice cubes till frothy. Mix in cut fruits and pour into glasses. The challenge is not to gulp down the drink but sip it slowly. Note: the 2 tablespoons of Crush can be substituted by 2 cups of the cut fruit (mango / strawberry) and some extra sugar while blending.
