Pocket-size powerhouse!

Raisins are a nutritious snacking option but they can also be used to make some yummy dishes. Here are a few recipes.

Raisin relish

Ingredients: raisins 1 cup; med. tamarind pulp 1 & 1/2 cup; jaggery powder 2 tbsp; sambar powder 1 tbsp; salt to taste. For seasoning:  oil 1 tbsp; mustard seeds 1 tsp; dhania seeds 1/2 tsp; methi seeds 1/2 tsp; cashew bits: a few; red chillies 2 pieces; asafoetida a pinch; curry leaves a few.

Method: Heat oil. Season with the above ingredients; add tamarind pulp along with jaggery and one cup water and simmer for 10 minutes until the gravy thickens. Add salt, sambar powder and raisins and cook for a minute more, till well-blended. Bottle when cool and store in the fridge. Serve with rice/rotis.

Hide and seek

Ingredients: raisins 1/2 cup; coconut gratings 2 cups; sugar 1 & 1/2 cup; ghee  2 tsp; milk 4 tsp; saffron a pinch - toasted & powdered.
Method: Sprinkle 3 tsp of milk on raisins and mix well to moisten. Cook sugar and coconut gratings till almost dry; mix saffron powder in 1 tsp of milk and add along with ghee and stir well, till the mix leaves the sides of the pan. Pour half of the mix on a plate and flatten to 1/2" thick layer. Sprinkle the raisins in an even layer; now pour the other half of the mix over this, so as to encase the raisin layer and press gently, but firmly. Allow to cool and set. Cut into desired shapes and serve.
