<p>Moong – mango payasa<br /><br />Ingredients:</p>.<p> Superior variety of ripe mango, washed, peeled and cubed - 1 cup; moong dal – ½ cup; thick coconut milk – 2 cups; pure ghee – 2 table spoons; jaggery syrup – one cup or sugar 1 cup; dry fruits – badam, pista – crushed ¼ cup; cardamom powder – ½ tsp; saffron – few petals.<br /><br />Method:Dry roast the moong dal till aroma comes, wash and cook to soft consistency with required quantity of water. Add jaggery syrup, cook for 3-4 minutes. <br /><br />Add mango cubes, ghee and coconut milk. Stir well. Put off the flame. Add nuts, cardamom power, saffron, mix well and serve. For better taste, fridge cool.<br /><br />Sweet potato squares<br /><br />Ingredients: Two healthy sweet potatoes, washed, scrubbed, cooked and mashed well; milk – 2 cups; sugar – ¾ cup; gelatine- 2 tsp, dissolved by double boiling method in water; crushed badam and pista – ¾ cup; A few petals of saffron.<br /><br />Method: On medium heat in a khadai, mix together mashed sweet potato, milk and sugar. Mix well till the sugar dissolves. Bring down the khadai. Add gelatin and crushed nuts. Mix well. Pour the mixture into a greased one- inch deep plate of medium size. Sprinkle saffron and shake the plate. Keep it in the fridge for ¾ hours to set. Cut into squares or any shape you desire. Serve to eat.</p>
