All hail the king!

It's time to go mango-crazy. Indulge in some yummy mango delights this season....

It’s the season of summer. This means that it’s also the season of mangoes. Deliciously sweet, mangoes are soul-satisfying fruits. But for those who are bored of eating mangoes the conventional way, here are some recipes that highlight the flavour of mangoes in a different avatar. You can make burfis,
puddings, salad and more with mangoes. Here are a few recipes:

MANGO BURFI

Ingredients: Mango pulp 1 cup, ghee 2 tbsp, milk 3/4th cup, sugar ½ cup, cardamom powder little, saffron ¼ tsp, silver foil 1 sheet.

Method: In a pan, melt ghee. Add mango pulp & cook, stirring constantly. When it’s cooked slightly, add milk. Cook for a while. Then add sugar, 1 tbsp ghee, cardamom powder and saffron. Cook the mixture till it starts leaving the sides of the vessel. Spread it on a greased plate. Cool the mixture. Then, cut into pieces and decorate with foil.

MANGO KALAKAND

Ingredients: Thick milk 1 litre, citric acid 2 pinches, sugar ½ cup, cardamom powder a pinch, mango pulp ½ cup.

Method: In a pan, boil the sugar. Add citric acid and stir it, otherwise, the milk will curdle. Continue cooking until it reaches a thick consistency. Add sugar and mango pulp. Cook until it collects in the centre. Add cardamom powder and mix. Pour the mixture onto a greased plate, sprinkle sliced almond pieces, and cover with silver foil. Let it set and then cut into pieces.

MANGO DESSERT

Ingredients: Mangoes chopped 2, milk 1 cup, sugar 2 tbsp, cardamom powder a pinch, mint few leaves, cream 1 cup.

Method: In a pan, boil milk, cream, sugar, chopped mangoes, cinnamon powder and mint. Mash slightly. Cook till the mixture is semi-thick. Chill & serve.

MANGO CHITRANNA

Ingredients: Cooked rice 2 cups, raw mango grated 1 cup, jaggery 1 tsp, coconut grated ¼ cup, turmeric powder a pinch, salt to taste.

For seasoning: Oil 2 tbsp, mustard 1 tsp, onion chopped 1, channa dal 1 tsp, urad dal 1 tsp, curry leaves few, turmeric powder a pinch.

Method: Grind coconut, mango and 4 green chillies with turmeric to a coarse paste. In a pan, heat oil. Add all the seasoning ingredients and fry well. Add the paste. Fry. Add salt, jaggery and cook well. Add rice, mix well and serve hot.

MANGO HALWA

Ingredients: Mango pulp 1 cup, chiroti rava ½ cup, sugar ½ cup, ghee ½ cup, cashew 50 gm, cardamom powder a pinch.

Method: Roast rava in 2 tbsp ghee. Also roast cashew nuts in ghee. Boil 1 cup water and add rava to it. Cook till it turns thick. Add sugar and mango pulp. Cook till thick. Lastly, add cardamom powder and mix well. Serve after 30 minutes.
