For an egg-cellent day

I moved to Bengaluru from Assam in 2005 to study. I had many friends working in the hotel industry and conversations with them is what intrigued me to join the culinary world. They made it sound so glamorous and fun that I thought I should give it a try.

Now that I think about it, growing up, I enjoyed watching my mother prepare something delicious. Slow cooking was something she has been good at and I have implemented that method in many of dishes today. She truly is a great good.

I trained under 20 chefs from different parts of the world and it’s been a joyous experience. I learnt a lot from them and that’s how I became interested in Mediterranean cuisine. That’s my speciality now.

When I first came to Bengaluru and started working, I found that the work culture was very tiresome. Being a chef is a great experience but I often found that I couldn’t make enough time for myself and my family. Having said that, nothing gives me more joy than experimenting and playing around with different dishes.

The joy on the customer’s face when they bite into your food is truly humbling. I consider my job to be a fun one and there’s always something new to learn every day.

One of the best advices that follow is that a chef should always give his all when preparing a dish. You can’t just add a bunch of ingredients and call it a dish. The food becomes all the more delicious when you put your heart, mind and soul into it, and finish it off with a sprinkle of love.

I now work as the Corporate Chef at The Egg Factory. Every day is challenging but I wouldn’t have it any other way.

The recipe of ‘Stir-Fried Tomato Fried Eggs’ is one of restaurant’s favourite. The egg preparation is very simple and something anyone can make at home. You can enjoy this dish for lunch or dinner and have an energetic day.

Stir-Fried Tomato Fried Eggs
Ingredients

* Egg, 3
* Tomato (one by four, lengthwise), 2 large
* Olive, 1 tbsp
* Spring onion, 1 tsp
* Salt and black pepper to taste
* Oil, 1 tbsp
* Soya sauce, 1/2 tsp
* Cold rice (better to use rice which was in the fridge), 1 bowl
* Mix vegetable (carrot, onion, broccoli, beans), 1/2 cup, chopped into small size
* Garlic, 1 tsp

Method
* Put a fry pan in medium heat, once heated put tomato, sprinkle oil salt and pepper, grill it for four minutes.
* Break eggs in a heated fry pan, once cook one side, fold to other side.
* Cut the fried eggs to cube pieces and add with tomato, Mix it well, check seasoning.
* In a wok, pour oil and add garlic and veggies and sauté it.
* Add rice.
* Season with salt, pepper and soya sauce.
* Serve with tomato scrambles and add chopped spring onion on top.
