Doing a cakewalk with jelly

It’s quite common that when one hears of Belgium cakes, chocolate cakes, mango cakes, red velvet cakes and sponge cakes, their mouth starts watering. But the latest in the cake family are the ‘3D jelly cakes’ which are making the rounds now.

Though it’s a common concept internationally, thanks to social media, there’s a video on how to make these creative jelly cakes that’s intriguing the interest of bakers in the city. However, there are only very few right now who are experimenting with this new concept. Joonie Tan, chef at ‘Lavonne’ says, “The trend of making these jelly cakes is only about a couple of weeks old in the city. It was the video going viral on Facebook that peaked my interest. I even had a class for a few who wanted to learn how to do this.”

The idea of making these cakes is quite simple, but one needs to have a lot of patience and steady hands for the right results. And it’s just perfect for vegetarians as the jelly is made using agar agar powder. With the right measurements and consistency, the cake artist can start poking into the cake to make interesting designs on it. However, there are specific tools which help bring out the shape of the design that one hopes for. As flower designs are being experimented on, one can purchase the gelatin art tools which come in the shape of petals and regular syringe to bring out the design.

“One needs to have very delicate hands and a bit of artistic sense to show the final design. They need to be able to analyse how the flowers will look like so that the liquid sets correctly,” adds Joonie.

Surbhi Jain and Vaishnavi are also such enthusiasts who’ve taken up the task to make these gelatin cakes. Surbhi says, “Vaishnavi taught me how to make these 3D jelly cakes and I had put it up on one of the Facebook pages for bakers. They became very popular and I’ve been getting a lot of orders to make it for people and also to teach the technique.”

The owners of ‘Cake Craft’ have been working on these for the past 2 months. “As difficult as it might look, it’s actually quite easy to make them. But the best part is that it tastes even better! We’re hoping to learn some more designs and evolve from the flower ones,” Surbhi says.

The cake artists are hoping to make 3D designs of fish and spider soon. As long as the base is kept be a plain jelly or transparent coloured flavours like lychee, one can learn how to paint inside the cake any way they want. There are tools for everything these days, after all!
