Suitable sauces

Apple sauce

Ingredients: Medium sized apples — 5-6, Water — ½ to ¾ cup, Sugar — ½ cup, Lemon juice — 1 tbsp.
Method: Wash apples 2 or 3 times. Cut into quarters, core and place in a saucepan. Add water. Cover the saucepan and cook until apples are soft. Force the cooked apples with a wooden spoon through a sieve or strainer into a bowl. Transfer to saucepan. Add sugar, lemon juice, a pinch of salt, and simmer to dissolve sugar. When cool, store in a covered jar and store in the refrigerator. Add to custard, stewed fruit or vanilla ice cream just before serving.
Strawberry sauce
Ingredients: Sugar — ¾ cup, Cornstarch — 1½ tbsp, Ripe strawberries — 1 cup, Lemon juice — 1 tbsp, Salt — a pinch.
Method: Combine the sugar and cornstarch with very little water. Stir in the crushed fruit. Bring to a boil,  stirring constantly and cook until clear. Remove from the fire, and add lemon juice. Store in a covered jar.

Chocolate sauce
Ingredients: Medium sized unsweetened chocolate bars — 2, Hot water — 1 ½ cups, Sugar — 2½  tbsp, Honey or corn syrup — 1 tbsp, Salt — a pinch, Butter — 1 tbsp, Vanilla essence — ½ tsp.
Method: Cut the chocolate into small pieces and melt in a double boiler over hot water. Gradually add the hot water, stirring until the mixture is well blended. Dissolve the cornstarch in cold water and add honey or corn syrup and salt. Mix well until well blended. Cook over boiling water for 10 minutes or until the starch is thick and smooth. Add butter and vanilla essence. When cool, place in a covered jar.
