Tropical treats

July to September is the best season for pineapple in India. This fruit is a good source of vitamin C, manganese, calcium, vitamin B1 and B6, copper.  It is low in fat and cholesterol. Good for digestion, it reduces cold, weakness, and thirst.

Pineapple Rasam
Ingredients: Cooked and mashed toor dal — 1 cup,  tamarind pulp — 1 teaspoon, rasam powder — 1 teaspoon, hing  — ½ tsp, pepper (powder)  — ½ teaspoon, cumin seeds (powder) — ½ tsp, mustard seeds —  1 teaspoon, salt to taste, chopped pineapple pieces  —  ½ cup.
For seasoning: Ghee, mustard seeds, and 3 – 5 pieces of pineapple
Method: Grind pepper and cumin seeds in a mixer to a fine powder. To the tamarind juice, add rasam powder, pepper  and cumin powder, salt, hing and allow the mixture  to boil and then add the mashed dal with required water. Let this mixture boil. Remove from flame. Grind pineapple to a fine paste and add to the rasam  and add the seasoning.
Note: Tomato and coriander leaves can overpower the flavour of pineapple.

Pineapple Pachadi
Ingredients: Ripe pineapple, finely-chopped — 2 cups, turmeric  — ¼ tsp, chilly powder — ½ teaspoon, curd / yoghurt — ½ cup, mustard seeds — a teaspoon, salt to taste, sugar/jaggery to taste, water as needed
For grinding: Grated coconut — 1 cup, green chillies — 4 nos, cumin seeds — ¼ tsp, turmeric powder — ¼ tsp, cut cubes of ginger — 1 tsp, mustard seeds — ¼ tsp,
For seasoning: Oil — 1 tbsp, mustard seeds — ¼ tsp, dry red chillies — 4 nos, curry leaves 1 sprig.
Method: Cook pineapple in water, salt, ¼ teaspoon of turmeric and ½ teaspoon of red chilly powder until it turns soft. Blend yoghurt with water and salt and the grounded pineapple paste for 8-10 minutes, till it becomes thick. Reduce heat and add the yoghurt. Mix well and add jaggery and cook for ten minutes. Pour seasoning over the pineapple pachadi.

Pineapple Masala
Ingredients: Finely chopped pineapple — half a cup, finely chopped cucumber — half a cup, finely chopped raw mango  — half a cup, finely chopped onion — half a cup, finely chopped tomato — half a cup, finely chopped coriander leaves — for taste, grated carrot — half a cup, salt to taste, congress  groundnut  — a few, the juice of lemon, sihi chutney — for taste, mint paste, cumin powder,  coriander powder, garam masala, chat masala, chilly powder, pepper powder — a pinch each
Note: For extra taste, garnish with puffed rice.
Method: Mix all ingredients together.
