Rustic flavour

The country chicken is a domesticated fowl, a subspecies of the red jungle fowl. Try some of these country chicken dishes.

Country Chicken Curry

Ingredients:

1 kg country chicken with skin cut into small pieces, 1 tsp turmeric, 3 tbsp huli powder (sambar powder), salt, 3 tbsp oil , curry leaves few, 4 chopped onions, 2 chopped tomatoes , a few coriander leaves .

Ground paste: Take 1 and 1/2 cups coconut, 2 cinnamon, 4 cloves, 1 inch ginger piece,10 flakes of garlic, with very little water, and grind in a food processor to make a fine paste.

Method: Heat oil in a cooker. Add onions, curry leaves, and fry well. Add chicken and cook for a while. Add tomatoes,salt,ground paste, huli powder, turmeric and fry well. Add 2-3 cups of water, pressure cook for 6 whistles and cool.Serve with ragi balls or steamed rice.

Country Chicken Chops

Ingredients: 1 kg country chicken with skin cut into medium pieces, 4 tbsp oil, 1 tsp turmeric powder, 4 chopped onions and salt to taste.

Ground paste: Take 2 bunches of pudina, 1 bunch coriander leaves, 1 inch ginger piece, 2 garlic cloves, 2 tbsp pepper corns, with very little water, and grind in a food processor to make a fine paste.

Method: Heat oil in a cooker, add onions, and fry well. Add chicken and fry well. Add ground paste, salt, and roast well. Add 1 cup of water and pressure cook for 6 whistles. Cool and dry the liquid completely. Lastly, sprinkle fresh coriander and add lemon juice.

Country Chicken Fry

Ingredients: 1 kg country chicken with skin cut into medium pieces, 4 chopped onions, 1 tsp turmeric powder,4 tbsp oil.

Ground paste: Take 2 tbsp huli powder, 1 tbsp white til, 1 tbsp poppy seeds (khus khus),1/2 bunch mint,1/4  bunch coriander leaves, with very little water, and grind in food processor to make a fine paste.

Method: Heat oil in a cooker,add onions,turmeric and fry well. Add the chicken, fry well. Add ground paste, salt, 1 cup of water, and pressure cook for 5 whistles. Cool and dry the liquid. Now add 1 or 2 tbsp ghee and roast nicely. Lastly, add lots of curry leaves, and few roasted groundnuts or cashew nuts for garnish.
