Eggstatic!

Plain Omelette

Ingredients: Eggs — 2, Pepper to taste, Milk — 1 tbsp, Cream of tartar — ¼ tsp (optional).

Method: Beat the eggs, add milk, salt, pepper and cream of tartar. Heat tawa and pour a spoon of oil. Pour the above mix and cook on a slow flame. Prick with knife for even cooking. Turn the omelette and cook the other side. Serve hot.

Chinese Omelette

Ingredients: Eggs — 2, Spring onions — a little chopped, Onion — 1 shredded, Cabbage — a little shredded, Carrot — 1 small shredded, Ajinomoto — a pinch, Pepper powder — a pinch, Soya sauce — ¼ tsp, Chilli sauce — ½ tsp, Vinegar — ¼ tsp, Salt to taste, Sugar — a pinch, Tomato sauce — 1 tbsp, Cream of tartar — ¼ tsp.

Method: Beat the eggs, add ajinomoto, pepper, salt, soya sauce, chilli sauce, vinegar, sugar, shredded cabbage, carrot, spring onion, onion and mix well. Heat tawa. Pour 1 tbsp oil. Pour the mix and cook on a slow flame. Prick with knife for even cooking. Turn and cook the other side. Serve hot.

Masala Omelette

Ingredients: Eggs — 2, Onion — 1 finely chopped, Green chillies — 1  or 2 chopped, Chilli powder — a little, Mint & Coriander leaves — a little chopped, Turmeric — a pinch, Salt & pepper powder to taste, Tomato — 1 de-seeded and chopped, Cream of tartar — ¼ tsp.

Method:  Beat the eggs well, add chopped onions, green chillies, tomato, mint, coriander leaves and mix well. Add salt, chilli powder, pepper and mix again. Heat tawa. Add 1 tsp oil, pour the mix, cook on a slow flame, prick with knife, turn and cook the other side, and serve hot.
