The Goan treat

Over hundreds of years, Portuguese, Christian, and Hindu cultures left an indelible impression on the Goan cuisine, giving it a beguilingly distinct flavour. In line with it, Chancery Pavilion, Residency Road is hosting ‘The Authentic Goan food festival’ in the City. The highlight of the food festival is chef Martina Fernendes, who will showcase her flavourful, popular cuisine.

Her food is made using traditional cooking techniques to retain that special flavour and is always presented artistically. Martina’s focus is on a dish’s natural flavours and the harmonious balance of flavours and textures. She has been doing this for years.

The best part is she can whip up an authentic, lip-smacking Goan meal in no time. Moreover, she doesn’t adhere to by standard recipes, but cooks from the heart and innovates with new techniques and combinations.

The success of her food all over India, speaks volumes of her craft and dedication. She recreates the magic with dishes like ‘Crab xac xac’, ‘Galina xacuthi’, ‘prawn balcho’, ‘pork solpotel’, ‘lamb vindalo’, ‘sol kadi’, ‘alle belle’, ‘bebinca’, ‘dolce’ and ‘bardez fish curry’.

These dishes have made her the star of many food festivals, including the recent food festival in Jaipur where she won the hearts and administration of everyone who was present. The festival is on till May 24, from 7 pm to 11 pm.
