There’s nothing quite like a tall, refreshing glass of juice to kickstart your day and revitalise your system. Combining the goodness of a host of raw, unprocessed fruits and vegetables in a bottle is Fresh Pressery Cafe that has recently come up on Vittal Mallya Road. Started by Rishaad and Natasha, it serves organic ‘cold-pressed’ juices and a healthy menu comprising salads, sandwiches and desserts. “Cold-pressed juices are very popular in the US and we wanted to introduce this concept in Bengaluru, a city teaming with fitness enthusiasts. The juices are free of any additives and preservatives. Since no heat is involved in extracting them, they retain their original nutrients. About a kilo of fruits and vegetables go into preparing one bottle (400 ml) and one can substitute it for two to three servings of salads. They also last longer for up to 72 hours,” explains Rishaad adding that they started delivering the juices a year ago in the City.

 One can take their pick from variants like ‘green flush’ (comprising spinach, bottle gourd, celery), ‘yellow hydration’ (pineapple, coconut water, chia seed), ‘anarkali’ (pomegranate and green tea), ‘capple’ (carrot, apple, ginger) and ‘purple saver’ (beetroot, carrot, spinach). They even have a ‘juice cleanse’ where one can opt for a juice diet of one, three, five or seven days. “It is a detox plan where one consumes six juices a day and keeps off other foods. There’s a nutritionist on-board as well who can formulate a long-term customised diet plan,” says Rishaad.
 A trained chef, Natasha, feels that people shy away from healthy food thinking it’s not tasty. “We want to eliminate that thinking while also being realistic in terms of the food choices. We have attempted to introduce good fats in the menu like avocado and flaxseed, also keeping in mind the needs of vegans and gluten-intolerant people,” she says. Their crunchy lettuce burger comes with lean beef/ chicken/ paneer wrapped in lettuce instead of bread. The sandwiches are prepared using wholegrain breads made from ‘apple flaxseed’, ‘buckwheat’ and ‘amaranth’. One can choose from wholesome salads like ‘Çaesar salad with roast chicken’, ‘tandoori chicken salad with pomegranate molasses’ and ‘five-bean salad with quinoa’. The dessert menu has several options — ‘Chia seed pudding’, ‘yoghurt parfait’, ‘carrot/beetroot halwa’ and granola/muesli bars.

 “We normally make use of alternative milk like almond/ rice/ cashew milk and natural sweeteners like agave nectar and stevia. These are safe and nutritious and also suited to different dietary requirements,” says Natasha.
