<p>With mangoes beginning to rain, it’s time to try out a mango-based dish. ‘Keri No Samosa’, a sort of fried pastry with a mango and nut filling served with vanilla icecream, is a must-try.<br /><br /></p>.<p>Ingredients<br /><br />For the filling <br /><br />2 kg mangoes (ripe)<br />4 tbsp sugar<br />56 gms almonds<br />1 tbsp butter<br />1 tbsp semolina <br />1 tsp cardamom and nutmeg powder<br />1tsp vanilla essence<br /><br />For the covering use ready made samosa patty or you can even use spring roll sheets if that’s not available.<br /><br />Method<br /><br />Boil the almonds and remove the skin. Slice and keep aside.<br />Cut the mangoes into pieces and puree.<br />Heat the butter and fry the semolina till light brown.<br />Add the mango pulp and then the sugar. Keep stirring till the mixture turns thick, then add the nutmeg powder, cardamom powder and vanilla essence.<br /><br />Allow it to cool.<br />Take small portions of the mixture and put it in samosa patty and make samosas.<br />Seal the edges and fry till light brown.<br />Serve with vanilla icecream.<br /><br />(Courtesy: Soda Bottle Openerwala)</p>
