Get set for mango splendour

With mangoes beginning to rain, it’s time to try out a mango-based dish. ‘Keri No Samosa’, a sort of fried pastry with a mango and nut filling served with vanilla icecream, is a must-try.


For the filling

2 kg mangoes (ripe)
4 tbsp sugar
56 gms almonds
1 tbsp butter
1 tbsp semolina
1 tsp cardamom and nutmeg powder
1tsp vanilla essence

For the covering use ready made samosa patty or you can even use spring roll sheets if that’s not available.


Boil the almonds and remove the skin. Slice and keep aside.
Cut the mangoes into pieces and puree.
Heat the butter and fry the semolina till light brown.
Add the mango pulp and then the sugar. Keep stirring till the mixture turns thick, then add the nutmeg powder, cardamom powder and vanilla essence.

Allow it to cool.
Take small portions of the mixture and put it in samosa patty and make samosas.
Seal the edges and fry till light brown.
Serve with vanilla icecream.
