Goodness of ginger

Ginger root is a rhizome (underground stem). It is one of the first spices which our ancestors traded with the West. Have you tasted mango-flavoured ginger (maavina shunti), which is in season now? Galangal is another variety of ginger, extensively used in Thai cuisine. It is fiery and pungent.

Fresh ginger is used as a condiment. It stimulates the digestive juices. Chewing a piece of fresh ginger relieves flatulence, indigestion and intestinal infection. A paste of burnt ginger with salt, when rubbed on teeth and gums, cures dental sensitivity.

Ginger Munch

Ingredients: Mango ginger — 6 pieces (¾ inch each); Sugar — a pinch; Salt — to taste; Lime juice — to taste; Asafoetida  (optional) — a pinch.

Method: Wash, peel and chop the ginger into fine pieces. Add the rest of the ingredients and bottle. Store in the fridge. Serve one teaspoon of this mixture before lunch/ dinner daily as a a digestive. This mix remains good for 2-3 weeks.

Boondi in Ginger Raitha

Ingredients: Curds — 2 cups; Readymade boondi —1 cup; Salt and sugar — to taste; Coriander leaves (chopped) — a few. Grind to a fine paste: Ginger gratings — 2 tsp (either ordinary ginger or mango-ginger); Green chilli — 1; Coconut gratings — 2 tbsp; Asafoetida — a pinch.

Seasoning: Oil — 1 tsp; Mustard seeds — ½ tsp; Red chilli — 2, broken into pieces.
Method: Beat the curds well, add salt-ginger paste and seasoning and mix well. Add the boondi just before serving; garnish with coriander leaves. It can also be served as a snack.

Ginger Burfi

Ingredients: Khova — 1 cup; Ginger powder — 2 tsp; Jaggery powder — ½ cup; Cashew powder — 1 tbsp; Toasted khus khus — 2 tsp; Almond slivers — a few.

Method: Mix all the ingredients except almond slivers and knead into a soft dough. Pat it into ½ inch thickness on a greased plate. Sprinkle almond slivers and press gently into the burfi. Cut into 1 inch or 2-inch squares and serve.

Suggestions: To preserve extra ginger, bury in a pot of sand and keep it moist. If ginger becomes fibrous, extract the juice and use it.
