Brain food, anyone?

And if you want to take your mind off formulae and equations, you can put together your favourite food with minimum fuss. Here’s something to help you along.

STUFFED OMELET

Ingredients:  2 eggs; 1 tbsp grated carrot; 1 tbsp grated cabbage; 1 tbsp cut methi leaves; ½ cube cheese grated; 1-2 finely cut flakes of garlic (optional); ¼ tsp pepper; 1 tsp oil; Salt to taste.

Method: Beat the eggs and salt till foamy. Heat the oil in a pan. Pour the beaten eggs. Sprinkle the methi leaves, carrot, cabbage, garlic and pepper over it. Reduce the flame. Spread the cheese all over. Fold the omelet in half and cook. Enjoy with lots of ketchup.

BREAD CHAAT

Ingredients: 2-4 slices multi-grain bread; 1 big bowl  thick, whipped curd; 2 tbsp green mint chutney; 2 tbsp sweet chutney; ½ tsp jeera powder; ½ tsp chaat powder; Salt to taste.

Topping options: Khara boondi/ fine sev/ grated carrot/ grated beetroot/ pomegra-nate/ sprouts.

Method: For green chutney: Grind ½ cup mint leaves + 1 cup coriander + 1 medium-sized onion + juice of ½ lemon and salt to taste. For sweet chutney: Mix tamarind pulp and required amount of sugar. Spread mint chutney between 2 slices of bread. Cut this sandwich into 4 pieces. Place on a small plate. Mix salt into the curd and pour the curd all over the bread. Sprinkle green chutney, sweet chutney, jeera powder and chaat powder. Top with one, two or a combination of topping options.
   
FRUITY YOGHURT

Ingredients: 1 large bowl thick curd; 1 large bowl peeled and cut assorted seasonal pulpy fruits (mango/  banana/ chikoo/ strawberries etc); 1tbsp honey or sugar (optional).

Method: Blend the curd and fruits together in a blender with sugar. Top it with honey and cool in the refrigerator.
 
YUMMY TRIFLE

Ingredients: 3-4 oatmeal/ multigrain biscuits; 1-2 tbsp wheat fibre Chocos; 1 cup fruit juice; 1 bowl peeled and cut seasonal fruits of all kinds (including apple and citrus fruits); 1 cup pro-biotic ice-cream of any flavour. Tall glass or a large dessert bowl to serve.

Method: Place biscuits and Chocos at the bottom of glass or bowl to form the lower-most layer. Pour the juice over this layer. Add the fruits on top, till glass/ bowl is 3/4th full. Top it with ice-cream. Cool and gorge on it.

CARRAPPLE SIP

Ingredients: 2 fresh grated carrots; 2 fresh green apples cut into small pieces; Juice of ½ lemon; 2 tbsp honey; 2-3 tsp sugar; ½ glass water.

Method: Cool carrots and apples if required, but before grating and cutting. Blend all ingredients in a mixer/juicer. Drink immediately.
