Moving beyond pizzas and pastas

There is no denying the fact that Indians are passionate about food. Be it the traditional food of different states easily available in every nook and corner or the ‘desi’ versions of international cuisines, Delhiites are not far behind in giving their taste buds something new each time.

However, when it comes to real infatuation for good Western food, pastas and pizzas are the only names that strike the majority. But what about the other Italian cuisines that are creating a buzz among food lovers?

“Pastas and pizzas are hot favourites but there are other Italian dishes like Brochettes, Risotto and Lasagna that are liked by the people,” says Chef Bill Marchetti of Spaghetti Kitchen. 

“People love it because Italian dishes have cheesy and creamy texture. Generally, people have a liking for spicy food so we add a bit of spices also. For starters people generally prefer brochette and green cheese potatoes whereas for the main course they go for lasagna or risotto. We also serve variety of breads as Italian food is incomplete without it,” says Bill.

Risotto is a classical Italian rice dish cooked in olive oil and butter for a creamy texture. “It is the broth of the vegetable or meat in risotto which adds flavour. People are fond of risotto these days because they get some variety in dishes made specifically from rice,” shares Bill.

Chef Bhagirath of Auma Restaurant believes that Italian food is more liked because it is not heavy. “All the cuisines of Italy are light and the tomato base makes it less spicy. The cream and butter added to it makes it easily digestible in comparison to the heavy gravy food.” 

He says, “Lasagna, a kind of flat pasta is very popular these days. It has the stuffing of vegetable or meet in different layers and baking adds ultimate flavour to it. Mushroom and Chicken Lasagne are always in demand.  More so, Spaghetti  cooked in garlic, live oil, tomato, different sauces  and herbs make it the most loved food after pizzas.”
