This dish therefore uses raw green mangoes. It’s a combination of spicy and tangy taste from raw mango, and crunchy texture from dals and peanuts. <br /><br />Ingredients <br /><br />Cooked rice – 1 & 1/2 cups (raw rice 1/2 cup) <br />Oil – 1 tablespoon<br />Mustard seeds – ½ teaspoon<br />Chana dal (Bengal gram) - ½ teaspoon<br />Split urad dal – ½ teaspoon<br />Peanuts – 1 tablespoon<br />Curry leaves – 5-6<br />Dry red chili – 1, broken in 2 pieces<br />Grated ginger– ½ teaspoon<br />Green chilies – 2, slit <br />Turmeric powder – ¼ teaspoon<br />Asafetida (Hing) – a pinch<br />Raw mangoes – 1 medium or 1 cup, grated<br />Coconut – 2 tablespoons <br />Salt - to taste<br /><br />Method <br /><br />Wash and peel the raw mangoes. Grate it with a small grater and measure around one cup. <br /><br />Heat oil in a pan on medium flame and once hot, splutter mustard seeds. Now, add chana dal, urad dal and peanuts and roast them till it becomes brown by stirring continuously. Add dry red chili and curry leaves. <br /><br /> Fry for a few seconds after which add ginger paste and slit green chilies. Cook them for 30 seconds. Turmeric powder, hing, salt and grated mango can be added now. <br /><br />Cook this for two minutes or till the mango gets cooked and tender, then add coconut and blend so that it gets mildly roasted. Add cooked rice and gently fold in the same with the mango mixture so that rice grains don’t break. Mix well till everything gets incorporated well and rice turns yellow in colour.
