The delicious, mouth-watering extension of kathi rolls aka shawarma, originated from Levantine Arab. It is akin to the Turkish doner kebab and the Greek gyros.

However, in India, the shawarmas come with a rich blend of spices and vegetables, quite innate to the general tastes of North Indians.

Such is the case of shawarmas from the ‘Concept’ food joint, which lies in the heart of the Defence Colony flyover market. While the so-called ‘tradition’ of the snack roll was started by Al-Bake in New Friends Colony, Concept has confidently taken over the food genre imparting it a delicious exclusivity.

The area is chock-a-block with similar food joints and small-scale restaurants offering delectable vegetarian and non-vegetarian fare. It seems like an ideal place for college students and food enthusiasts who are partial to the delightfully ‘Punjabi twist’ in every food item.

Amongst all other food joints, Concept seemingly is the most crowded.

The shwarama tandoor (griller) is placed right in the front of the food joint. Gleaming hot  with greedy flames roasting the chicken is in itself a mouth-watering sight. And one cannot help but enjoy the fascinating process of the preparation of shawarma, that is so soft, mildly spice and oozing with the goodness of chicken slivers, mayonnaise and a sumptuous amount of tomato slices and coriander leaves that are sprinkled over the entire filling. Even a passer-by cannot ignore this tempting sight.

Within a few seconds the whole process of artistically arranging the chicken filling is done and a plateful of piping hot shawarmas, with mayonnaise and green chutney is ready to be served.

Fascinated by the entire process of the preparation of shawarma, Metrolife wonders if these vegetables are really a part of the original dish.

Pradeep Kumar Doltani, owner of Concept clarifies, “We are aware of the Delhiites love for Punjabi taste, that’s why a moderate balance of spices and vegetables like onion, tomato and coriander are added to the chicken filling, so that people with varied food tastes can enjoy the dish.”

Well, these additions to the dish tempt one to overindulge and feast on the soft rolls that surely make for a hearty meal.

And what makes it better, is the pocket friendly rates, a mere Rs. 50 for a mouth-watering-heart-warming snack.

A man of humble spirits and sound business acumen, Doltani feels that, “maintaining the five-year-old quality, when we started, is a challenging task. The personal attention that we give to every food item and the maintenance of its certified quality, are probably the reasons why we have customers coming all the way from parts of West Delhi, Noida and Gurgaon.”

Besides, Chicken Malai Tikka, Afghani Chicken and Chicken Lollipop are some of the other highly demanded food items at Concept. There is nothing less for the vegetarians too, who can treat themselves with Concept’s version of veg. kathi rolls and kebabs.

A place which serves you till as late as 11.30 in the night, Concept’s chicken shawarma that melts in the mouth with the very first bite, is worth a try!
