Tasty ways with baby corn

If there is one vegetable that is a powerhouse of great nutrition and taste alike, it is baby corn. Rich in carotenoids, vitamins B & C, sodium, and fibre, baby corn is one such vegetable that offers resistance to several health problems like constipation, colon cancer, cataracts, heart diseases, and abnormal blood pressure.

Eat it raw or cooked, grilled or boiled, baby corn is a haven of taste and health bundled into a crunchy, chewy, delicious vegetable. Following are some classic baby corn recipes that are sure to please one and all:

Baby corn soup

Ingredients: 12 baby corns cut into big pieces, 1/4 cup spring onions with greens and onions-chopped, 1 chopped carrot, a few palak leaves, 1/4 tsp ajinomoto, 6 cups water, 2 tbsp butter, 2 maggi chicken or veg cubes, salt and pepper to taste, 1 tsp tobasco sauce.

Method: Trim and chop palak. Melt butter in a pan, add onion with greens and saute. Add baby corn strips, fry for a while, add palak, and cook for a while. Then add 6 cups of water, seasoning cubes, ajinomoto, salt, and pepper. Dissolve 1 tbsp cornflour in 1/2 cup of water, add to the above soup, and simmer for 5 min. Add tobasco sauce and serve hot.
Note: Leave out ajinomoto if you are prone to acidity or heartburn.
                      
Crispy Baby corn with vegetables

Ingredients: 6 baby corns cut into fingers, 2 capsicums cut into fingers, 12 flowerets of cauliflower, 5 tbsp cornflour, 5 tbsp maida, 2 tsp ginger garlic paste, 2 tsp black pepper powder, 1/2 tsp ajinamoto, 1 tbsp lemon juice, 1 tbsp red chilly paste.

Method: In a bowl, take all the vegetables, add maida, cornflour, ginger garlic paste, black pepper powder, ajinamoto, lemon juice, red chilly paste, sprinkle liltte water and mix well. Deep fry in hot oil till crisp. Serve hot with hot garlic sauce.

Kadai baby corn

Ingredients: 12 baby corn cut into long strips, 2 capsicums cut into long strips, 2 tsp ginger garlic paste, 1 tbsp green chillies paste, 2 chopped onions, 2 chopped tomatoes, 1/2 cup fresh cream, 1 tsp turmeric powder, 2 tsp chilly powder, 1 tsp garam masala, 1/2 tsp cumin powder, salt to taste, 1 tbsp kasoori methi, 1/4 cup cashew paste, 3 tbsp oil.

Method: In a pan, heat oil. Add onions, ginger-garlic-green-chilly paste and saute. Add chopped tomatoes, capsicum, all the dry powders, baby corn, water, salt, and cook till done. Lastly, add 1/4 cup cashew paste, cream, a little water, and kasoori methi. Cook for a while, and serve hot.
