Nutty and very nutritious

If you want to indulge your sweet tooth, here are a few recipes that are guaranteed to give you a sugar high.

Carrot Pak

Ingredients: Fine carrot gratings — 2 cups (grind coarsely); Besan — 2cups; Sugar — 2 cups; Milk — half a cup; Ghee — 4 tbsp; Cardamom powder — 1/4 tsp.

Method: Heat the ghee and fry besan  to a light brown colour until a rich aroma rises from the frying pan. Keep aside. Cook the carrot gratings in milk till they turn soft and tender. Add sugar and coconut gratings and cook till almost dry. Add the fried besan and keep stirring, till the mix leaves the sides of the pan. Add cardamom powder. Mix well and pour it into a plate. Shape the mass into a square of half-inch thickness and cut it into squares/diamonds while it is still warm. For the quantities mentioned, you will get at least 25 pieces.

Crunchy Badam Munchies

Ingredients: Fine sooji — 2 cups; Maida — 2 tbsp, Fat — 3 tbsp, Salt — a pinch, Fat for deep frying, Badam Feast powder (MTR/Nandini) — 4 to 5 tbsp.

Method: Mix together sooji, maida and salt. Heat the fat and add it to the sooji mix. Make a stiff dough by using water and leave aside for an hour, after kneading well. Make a lemon-sized ball of the dough, cut into squares/diamonds and deep fry in hot fat till it browns and becomes crisp. Drain the oil and store it in a bowl. Sprinkle a tablespoon of badam powder and shake the bowl, to coat all the squares uniformly. Store when cool. Serves eight.

Nutty Pops

Ingredients: Peanuts — 2 cups; Jaggery powder — 3/4 cup, Sesame seeds (toasted) — 2 tbsp, Khus khus (toasted) —1 tbsp; Cardamom powder — half a teaspoon.

Method: In a thick-bottomed iron pan, roast the peanuts. Add the rest of the ingredients and keep stirring till the mixture becomes dry and the nuts are coated. Allow to cool in the pan itself and then break it into chunks while it is still warm.

Note: For variety, cashew nuts can be substituted for peanuts.
