Apple chutney

This recipe requires green apples, popularly known as Granny Smith apples, which have a tangy taste.

Ingredients: Green (Granny Smith) apples — 2 (wash, pare, core and cut into small pieces); Fresh coconut (grated) – ½ cup; Green chillies – 4; Ural dal – 1 tbsp; Oil – 1 tsp; Sugar – 1 tsp; Lime juice; — a few drops.
Seasoning: Oil – 1 tbsp; Mustard – ½ tsp; Asafetida (Hing) powder – a pinch.
Method: Heat the oil in a kadai over medium flame. Add urad dal. Roast till golden brown. Add green chillies and sauté for a minute. Now add the chopped apples. Sauté for a minute or two. Remove from the stove. Add grated coconut, salt, sugar, and grind to a coarse mix. Add some washed coriander leaves. Run the mixie for 10 seconds. Transfer the mixture to a serving bowl, add lime juice and mix. Add the seasoning. Serve with hot steamed rice, dosas, idlis or chapatis.

Puffed rice mix
Ingredients: Granny Smith apples (washed, pared, cored and cut into small pieces) – 1 cup;  Puffed rice (avalakki) medium thin variety -1½ cups (washed and soaked for 5 minutes); Fresh coconut (grated) — ½ cup; Broken cashew nuts – a few; Curry leaves – a few; Salt — to taste; Sugar – 1 tsp, Lime juice – 2 tsp; Oil – 2 tbsp; Mustard seeds – ½ tsp; Urad and Bengal gram dal together – 1 tbsp; Red chilies –  3-4; Green chillies – 2, slit length wise; Turmeric powder – ½ tsp, Hing powder – ½ tsp.

Method: Heat oil in a fairly broad kadai over medium heat. Add mustard seeds. After they splutter, add red chillies, Bengal gram dal and urad dal, cashew nuts, curry leaves, hing and turmeric and fry till golden brown. Add chopped apples and  sauté for 3-4 minutes, sprinkling a little water. Squeeze the water out of the soaked puffed rice and add it to the mix. Cover the kadai for 3 minutes and cook. Turn off the stove. Add grated coconut, salt, sugar and lime juice to the puffed rice mix. Stir well to mix uniformly. Serve hot with a bowl of thick curd. This makes a healthy and satisfying snack.
Apple butter
Ingredients: Apples (red) – 4 (washed peeled, cored and cut into thin slices); Sugar – 2 cups; All spice mix – ¼ tsp; Cinnamon (whole) – 2 inch piece; Cloves – 3-4; Water — 3 cups; Salt – a pinch.

Method: Boil water and salt, add the prepared apples and cook, stirring frequently, until the apples soften. When the mixture begins to thicken, add sugar and spices. Cook stirring constantly until the mixture turns buttery smooth. Store in sterilised bottles. This delicious spread can be eaten with bread or pancakes.
