Located in the heart of Koramangala seventh block is the authentic Assamese cuisine restaurant — Gam’s Delicacy, serving delicious, traditional Assamese food. Gam’s Delicacy, which is a popular restaurant chain in Assam, travelled down to Bangalore recently for a crowd that is ever ready to explore a new cuisine.

“We wanted our authentic cuisine and culture to be known to everyone in the City. Bengaluru being the gateway to the South, it was the best place to open our new branch,” says Bhuban Gam, the owner of Gam’s Delicacy. This place serves wholesome traditional Assamese meal that includes a soup, which acts as an appetiser, ‘Joha’ rice (an aromatic variety of rice), two types of dals (mixed dal and black dal), a mixed vegetable, ‘xaak’ (herb) and ‘khar’ (alkali base prepared with the ashes of ‘Bheem Kol’, a heavily seeded variety of banana).

The most popular items in the menu are ‘chicken patot diya’ (chicken on banana leaf), chicken with banana flower, ‘pitha guri chicken’ (chicken with rice flour) and ‘til diya chicken’(chicken with sesame seeds). The popular ‘fish tenga’ cannot be left behind when one talks about Assamese food and Gam’s Delicacy offers a variety of fish tenga with exotic ingredients.

“We use less oil, freshly grounded raw spices and serve our food in the authentic Assamese utensil, ‘Kanh’ (bell metal), keeping in mind the health benefits like faster digestion,” adds Bhuban. The customers are mostly young people, including college students, and families. “People here are big foodies and they love to try out something new. There are a lot of customers who even ask us the recipes of what they have ordered,” he says.

As for the interiors, it is pleasant to see that they have not gone overboard in terms of making it ultra ‘Assamese’.  The place has a simple yet authentic and enticing look. The music is soothing and familiar English and Hindi tracks are played often.

“We have received a lot of appreciation from our customers which keeps us motivated. Since the ‘bhuna’ method of cooking is not followed in our cuisine, we first boil the vegetables and then use raw, grounded spices, it is very healthy and easy to digest. For all those who like to try a different cuisine, Gam’s Delicacy is the place to be,” Bhuban says.
