Navratri is a festival of decoration, lights, happiness, joy, and obviously, foods. And when you think of special foods during Navratri, sweets and desserts will take an important place. In India, where a sizable chunk of population is vegetarian, and festivals such as Diwali and Navratri involve vegetarian cooking, having eggless versions of signature desserts are important.

Here are the recipes you can make at home this Navratri:

Strawberry & Basil Fruit Jelly (Pâte de Fruit)

Ingredients (in gram)

  • Stawberry puree 318
  • Basil 10
  • Water 50
  • Granulated sugar 33.75
  • Pectin 10
  • Glucose 63.75
  • Granulated sugar 300
  • Citric acid solution 3

Procedure:

  • Slice the basil and infuse with warm strawberry puree together, then add in the mixture of pectin-sugar and stir nicely and strain it.
  • After mixing up everything, add in glucose and granulated sugar, and bring the mixture to 107˚C.
  • Remove from fire and add in the citric acid solution.
  • Set in the frame or silicon mould.
  • Once set, sprinkle sugar on it.

Mango Baked Yoghurt

Ingredients (in gram)

  • Hung curd 200
  • Sweetened condensed milk 125
  • Fresh cream 175
  • Alphonso Mango 1 number
  • White chocolate 50
  • Mango pulp 100
  • Pistachio flakes 10
  • Fresh mint for garnish

Procedure

  • Cut the mango in small cubes and mix with a little mango pulp.
  • Add in heat-proof glasses as base and keep it aside.
  • Mix the yoghurt and add condensed milk and cream. Pour this mixture in glasses.
  • Bake at 150-degree C for 10-12 minutes
  • Cool it down in the refrigerator for two hours.
  • Garnish with mango pulp, white chocolate flakes, pistachio and fresh mint.

Chocolate & Walnut Cookies

Ingredients (in gram)

  • Cookies (45), 50 gram each
  • Butter 300
  • Brown sugar 300
  • Castor sugar 125
  • Salt 5
  • Water 80
  • Wheat flour 80
  • Baking powder 10
  • Vanilla extract 8
  • Milk chocolate 250
  • Dark chocolate 250
  • Walnuts 250

Procedure:

  • Take a saucepan and add coconut sugar, brown sugar, salt and water.
  • Mix wheat flour and baking powder.
  • Knead margarine, the sugars of the saucepan, flour mix and vanilla extract in a bowl for three minutes.
  • Chop chocolates and walnuts and mix with the dough. Bake at 190 for 10 minutes. Let it cool.
