Hopefully, this simple recipe will make working quinoa into your diet much easier.</p>.<p><span><strong>Ingredients</strong></span><br />3/4 cup quinoa</p>.<p>6 large dates, pitted</p>.<p>1 cup rolled oats</p>.<p>1/2 cup almonds, chopped</p>.<p>1/2 cup almond/ peanut butter</p>.<p>1/3 cup honey</p>.<p>1 tsp vanilla extract</p>.<p>1/4 tsp salt</p>.<p>1/2 cup pumpkin seeds (optional)</p>.<p>50 grams of dark chocolate, melted (optional)</p>.<p>Yields 9-12 bars</p>.<p><span><strong>Instructions</strong></span><br />Preheat oven to 150°C and line a square bake tray with butter paper. Let the butter paper overhang on the sides of the tray to make removing the bars from the pan easier.</p>.<p>Blend dates into a paste and place in a large bowl.</p>.<p>Add quinoa, oats, almonds, pumpkin seeds. nut butter, honey, vanilla and salt to the bowl and stir until the ingredients are evenly incorporated.</p>.<p>Pour the mixture into the baking tray and press it down into an even layer. Bake for 20-22 minutes, until the edges just begin to brown.</p>.<p>Remove from oven and allow to cool completely. Drizzle melted chocolate over the bars and let chill in the refrigerator for an hour.</p>.<p>Remove from tray and cut into bars using a sharp knife.</p>
