Avalakki Pulav

Ingredients: Avalakki — 1 cup, carrot, capsicum, beans, brinjal, — 1 cup, garam masala — 1 teaspoon, red chilli powder — half a teaspoon, coriander leaves — half a cup, onion — 1, oil — 4 teaspoons, salt — half a teaspoon.
Method: Add oil to a frying pan and throw in the chopped onion, garam masala, red chilli powder, coriander leaves and boiled vegetables. Fry it well. Add the washed and soaked avalakki and stir in for about 10 minutes. Fry it on a low flame.

Avalakki Vada

Ingredients Avalakki — 1 cup, yellow flour (chickpeas)  — 1 cup, green chillies — 2, garam masala powder — half a teaspoon, onion — 1, salt — half a teaspoon, oil.
Method: Wash and soak the avalakki in water for half an hour. Remove the water and add the chopped onions, green chillies, garam masala, salt, yellow flour and mix it into a soft dough. Deep fry bits of this dough in oil.

Avalakki Burfi

Ingredients: Avalakki — 1 cup, sugar — 1 cup, milk — 4 cups, cardamom powder — half a teaspoon.
Method: Wash and soak the avalakki in water for half an hour. Remove water and throw it in a pan. Add milk and boil the mixture on a low flame. Keep stirring this for ten minutes and add sugar and cardamom powder until it turns into a thick paste. Add two teaspoons of ghee. Transfer the contents onto a plate and wait for it to cool before cutting into squares and serving.
