Pancha Kajjaya

Ingredients: 1 cup roasted gram powder, 1/2 cup fine sugar, 1 tsp cardamom powder, 1/2 cup dry copra

Method: Mix all the ingredients in a bowl

Kari Kadabu

Ingredients: 1 cup maida, 1/4 cup chiroti rava, 1 tbsp heat flour, 1 tbsp ghee, 1 tbsp hot oil

Method: In a bowl take all the above ingredients, add little water or milk and make a stiff dough. Keep it aside for 30 minutes

Ingredients (for filling): grated copra, 1/2 cup fine sugar, 1 tsp cardamom powder, 10 cashew nuts, 2 tbsp melon seeds (coarsely powdered)

Method: in a bowl, mix above ingredients and keep aside. Divide the dough into small balls, roll small puris, put a little bit of filling into it, close to a half moon shape and deep fry in hot ghee or oil.

Sweet Kadabu
(Modaka)

Ingredients: 2 cups rice flour (processed) , a pinch of salt, 2 tbsp maida, 2 tbsp oil

Method: In a big vessel, add 3 cups of water, and salt. When it is boiling, add maida, rice flour, and salt. Cook on low flame for 6-8 minutes. Take out and knead well. Divide into small equal balls. When it is still hot, flatten it and put a little filling. Give the shape of a modak and steam for 10 minutes.

Filling: Take 2 cups coconut (grated), powder it coarsely in a mixie with 1/4 cup of fried gram and 1 cup of pounded jaggery. Mix everything in a bowl. Cooking is not required.

Black Channa Usli

Ingredients: 1 cup black channa (soaked overnight), 1 chopped onion (optional), 4 green chillies (chopped), few curry leaves, salt to taste, 2 tbsp oil, 1 tbsp lemon juice, half-cup coconut (coarsely ground), few coriander leaves

Method: In a pan, heat oil, add mustard seeds, hing, onions, green chillies, curry leaves and fry well. Add cooked channa, salt, mix well. Lastly, add coconut, coriander leaves and lemon juice.

Khaara Kadabu

Ingredients: 1 cup urad dal (soaked for 4 hours and coarsely ground), 1/4 cup coconut bits, 1 inch ginger (chopped), 4 green chillies (chopped), a few coriander leaves (chopped), salt to taste, and a pinch of hing. Tip: In place of urad dal, you may use channa dal.

Method: Heat 1 tbsp oil in a pan, add above ingredients  with little water and cook till dry. For outer covering, follow the method of sweet kadabu.
