Flakes of spice

This Deepavali, indulge your tastebuds in a delicious snack, which is extremely easy to make — ‘Cornflakes mixture’. Chef Sridhar Sigatapu from Grand Mercure Hotel shares the recipe.

Ingredients
n Dry cornflakes - 1.5 cups
n Roasted gram ‘dal’  
 1/8 cup
n Peanuts - 4 tbsp
n Cashews - 8
n Raisins - 1 tbsp
n Curry leaves - a sprig
n Red chilli powder - 1.5 tsp
n Sugar - 1/2 tsp
n Salt to taste
n Oil - 1 tsp
n ‘Ghee’ - 1 tsp

Preheat oven at 180 degree celsius. Add a butter paper to the baking tray and then spread a layer of cornflakes. Bake it at 180 degree celsius for three to five minutes stirring every now and then till it is golden brown. Set aside. Likewise, repeat the process for roasted gram ‘dal’ and peanuts separately. Mix the three and set aside.

In a wide pan, add a teaspoon of ‘ghee’ and fry cashews and raisins till golden brown. Set aside. Add a teaspoon of oil and add curry leaves along with red chilli powder and salt. Mix well and add the cornflakes along with nuts and raisins. Give a toss until the spices blend well with the mixture. Cool down, store in an airtight container and enjoy the gluten-free snack with a cup of tea or coffee.
