Where food fuses with fun

A hectic day at work made us want to unwind with some good food at a conveniently-located place. A quick search on the Internet threw up a variety of options, but Flluid at Mosaic Hotels caught our fancy with its “innovative” new menu, promising to offer the best of fusion food from a combination of traditional and contemporary dishes.

Situated in the middle of the Noida Sector 18 market, at a stone throw’s distance from the Metro station, the elegantly decorated Flluid can be described as an escape from the cacophony of the always-crowded market that surrounds it.

As soon as we settled on a set of high-back chairs, we were served Lychee Paradise, as a welcome drink. The mocktail was a concoction of lychee crush, grenadine syrup, pineapple juice topped with Sprite, and was served in hip flasks. It had an overpowering taste of grenadine syrup, and we put down the flask after a few small sips. But the accompanying Mushroom Bouche, which was served in miniature irons, was flavoursome and made up look forward to our meal.

We decided to begin with a soup from their menu’s ‘Slurrpy’ section, and were served Gun Powder infused American Corn Chowder. Served absolutely hot, the thick soup had a delightful aroma and the right blend of flavours. Next up were the Achari Paneer Tikka Tart and Chicken Khurchan Tart — which had servings of pickled cottage cheese and chicken khurchan (respectively) on tarts. The toppings were hearty and tasted beautiful; however, we hoped the tarts were a little softer, making it easier to eat.

But the next offering, the Chatpati Chicken Tikka Pudhina Chaat impressed us. The Indian style tandoori roasted tikka was tossed in onions, tomatoes and mint chutney. The diced chicken had absorbed the flavours and it was a like a party inside the mouth. Being a street food fan, the flavours of the dish just added to the experience.

Hungry beyond measure, we looked forward to the next dish and were delighted to be served Amritsari Masala Based Fish. Extremely tender from within, the Amritsari masala marinated sea bass had the perfect crunch on its outer layer and just melted in our mouths.

Still relishing the taste of the sea bass, and we were served an array of dishes — Organic Sprout Salad, Mutton Boti ke Taco and Murg Kathi Roll. The freshly grown sprouts, while were definitely healthy, lacked seasoning; but its non-vegetarian counterparts were clear winners. A bite into the mutton taco was no less than sinful, with the cheese oozing out and the mutton being far from chewy. Similarly, the kathi roll (with an egg covering) made up lick our fingertips.

With so much for appetisers, we were almost full to have the main course. But the Chicken Steak with Parsley Rice and Veggies tempted us to place an order. The herbs-infused steak was grilled to perfection and was beautifully complimented by the jus. However, before wrapping our meal, Metrolife decided to take a quick look at their dessert section, aptly named ‘Forget-Cavity’, and without a second thought opted for the Gulab Jamun Cheese Cake.
