What's in the cake?

Cherry Cake

Ingredients: Around 100 gm of flour; 100 gm of powdered sugar; 2 eggs; 80 gm of butter; 8 to 10 cherries (finely chopped); 1/4 tsp of cardamom powder and 1/2 tsp of baking powder.

Method: Mix butter and powdered sugar in a bowl and add the eggs. Mix the baking powder, the flour and cardamom powder and fold it into the butter and egg mixture. Now add the chopped cherries to the cake batter. Grease the cake tin with butter. Pour the batter into the tin and spread it out evenly. Sprinkle a few cherries on top. Place the tin in a preheated oven at 170 °C and bake for 25 to 30 minutes.

Carrot Cake

Ingredients: Around 100 gm of flour; 100 gm of castor sugar; 100 gm of butter; 2 eggs, 1/2 tsp of baking powder; 75 gm of grated carrots; 1/4 cup of milk and 1/4 tsp of nutmeg powder.

Method: Mix butter and castor sugar in a bowl and add the eggs. Mix the baking powder with the flour and add it to the bowl along with milk and the carrot. Grease the cake tin with butter. Pour the batter into the tin and spread it out evenly. Place the tin in a pre-heated oven at 170 °C and bake for 25 to 30 minutes.

Banana Cake

Ingredients: Around 100 gm of flour; 110 gm of castor sugar; 90 gm of butter; 2 eggs; 2 tbsps of curds; 1/2 tsp of baking powder; 100 gm of mashed bananas and 1 tsp of cardamom powder.

Method: Mix butter and castor sugar in a bowl and add the eggs. Mix the baking powder and the flour and fold it into the butter and egg mixture. Add the curd and mashed banana to the cake mix. Grease the cake tin with butter on all sides. Pour the batter into the tin and spread it out evenly. Place the tin in a pre-heated oven at 170 °C. Bake for 25 to 30 minutes.

Pineapple Cake

Ingredients: Around 100 gm of flour; 120 gm of castor sugar; 80 gm of butter; 100 gm of finely chopped and grated pineapple; 2 tbsps of pineapple juice; 1/2 tsp of baking powder and a pinch of salt.

Method: Mix butter and castor sugar in a bowl and add the eggs. Mix the baking powder and the flour and fold it into the butter and egg mixture. Now add the pineapple pieces and juice to the cake batter. Grease the cake tin with butter. Pour the batter into the tin and spread it out evenly. Place the tin in a pre-heated oven at 170 °C. Bake for 25 to 30 minutes. To check if it is done, pierce with a toothpick.
