<p>Mother’s Day is almost here and here are two simple and special recipes you can cook for your mother on her special day — French toast with whipped cream and maple syrup and jam cookies. <br /><br /></p>.<p>The recipes are given by Chef Sandip Narang, Executive Chef, The Taj West End.<br /><br />Jam cookies<br /><br /><em>Ingredients </em><br /><br />Butter (softened) - ¾ cup <br />Castor sugar - ½ cup <br />Eggs - 2<br />Refined flour - 13 cups <br />Mixed fruit jam - ½ cup <br /><br />Method <br />Preheat the oven to 180 degree Celsius. In a bowl cream butter and sugar until soft and fluffy. Slowly, add the refined flour and mix until it forms dough like consistency. Refrigerate the dough for 20 minutesMake small balls from it and place on a baking tray lined with parchment paper. With a spoon make a small hole in the centre. Fill up with mixed fruit jam. Bake for 8 to 10 minutes until golden brown. Remove from oven and allow to cool. Lightly dust with icing sugar.<br /><br />French toast with whipped cream and maple syrup<br /><br /><em>Ingredients</em><br /> <br />Eggs - 4<br />Milk - ¾ cup <br />Brown sugar - 3 tablespoons<br />Cinnamon - 1 teaspoon (ground)<br />White bread (Preferably Brioche bread) - 10 slices <br />Unsalted butter <br />- 1 tablespoon <br />Whipped cream - 100gm <br />Maple syrup - 100 ml <br /><br />Method <br /><br />In a large mixing bowl, beat the eggs. Add the milk, brown sugar and cinnamon. Stir the mixture well. Soak the bread slices in the egg mixture until saturated. Heat a griddle or frying pan to medium heat. Brown the slices of bread on both sides adding butter. Serve the French toast with quenelle of whipped cream and drizzle maple syrup.<br /><br /><br /></p>
