Macaroni mania

Herbed Macaroni Footlong

Ingredients: 1 large loaf of French bread — sliced into 2; ½ cup cooking cheese, grated; Butter for greasing.

For the filling: 1 onion, chopped; 1 small capsicum, chopped; 4-5 garlic cloves, finely chopped; 1 stalk celery, chopped (optional); 10-12 button mushrooms, sliced and steamed, ¾ cup sweet corn kernels, steamed; 1 tomato, chopped; 4 tbsp tomato ketchup; 2 tbsp chilli garlic sauce or Thai chilli sauce; ½ cup (100 ml) milk; ½ tsp cornflour, mixed with milk; ½ cup uncooked macaroni; 1 tsp oregano; 1 teaspoon basil; ½ tsp paprika; 2 tbsp butter; Salt and pepper to taste .

Method: Boil the macaroni with salt. To enhance the flavour of the macaroni, toss in half a teaspoon of butter or olive oil with oregano, basil, paprika and some pepper. Keep this aside. Heat the butter and fry garlic, celery, onion and capsicum. Sauté till the onions turn translucent. Then add the corn and mushroom. Sauté this mixture for 3-4 minutes. Add the chopped tomato, ketchup, salt, pepper and stir till the tomato softens. Add the milk and cornflour mixture. Now add the herbed macaroni and mix well. Simmer till it thickens. Divide into 2 equal portions. Spread one portion of the filling mixture on one half of the sliced French bread. Place it on a greased baking tray. Top it with grated cheese and bake in a pre-heated oven at 180°C for 5-8 minutes till the cheese melts. Serve hot with tomato ketchup.

Macaroni Fruit Salad

Ingredients: 1 cup uncooked macaroni, boiled with salt; 1 orange, peeled and cut into tiny segments; 1 sweet lime (musambi), peeled and cut into pieces; 1 apple, peeled, cored and diced; 10-12 black and green grapes; 3-4 lettuce leaves, washed and torn roughly into smaller pieces.

For the dressing: ½ cup curd, hung for 15-20 minutes; ¼ cup fresh cream; 2 tbsp mayonnaise (optional); 3 tbsp pineapple juice; 3 tbsp chopped mint; 1 tbsp dry mint leaves; 1 tsp of mixed herbs (oregano, basil); ¼ white pepper; Salt to taste.

Method: Combine all the salad ingredients and keep aside. Mix the dressing ingredients together. Pour the dressing on the macaroni mixture. Check for salt. Cover and chill for 1 hour.  When serving, add a little pineapple juice or mayonnaise (mixed with little milk) to loosen up the pasta.
