Going bananas over bread

Baking was a sweet accident for me. I wouldn’t say that I have had a long history of experimenting with baking. In fact, my love for baking has just blossomed. It started out as a means to kill boredom. However, by the day, my passion for it is just growing by leaps and bounds.

My first tryst with baking was when I tried baking a bread. I have had a long and strong obsession with bread. So one day, instead of buying the normal bread from the bakery, I decided to make my own. Also, I wanted to give this bread a healthier and tastier twist.

I place a lot of importance for nutrition and I think everybody should. Which is why I decided to go for a non-starchy bread. The recipe I am sharing today is of banana and oats bread, which is secretly healthy and seemingly delicious. I have also tried my hands at baking healthier versions of cookies and cakes apart from breads. This interest has taken most of my time and my baking activities goes on till late in the night. The next morning, it is heartwarming to wake up knowing that I have some guilt-free sweet indulgence waiting for me. This is also a sanctuary for me and a break from the monotony of student life. Baking has clearly become my favourite pastime.

However, certain experiments are bound to fail (as I am still an amateur). But this does not disappoint me. Yes, it is difficult when you do not get what you desire. But these setbacks help in the process of mastering the art. All I want to tell the beginners like me is — just clean up the mess and start afresh with renewed zeal.


Banana and oats bread

Ingredients
n Eggs - 2 large
n Honey - 1/2 cup
n Unsweetened
apple sauce - 3/4 cup
n Vanilla - 1 tsp
n Oat flour - 1.5 cups
n Salt - 1/2 tsp
n Baking powder - 3/4 tsp
n Cinnamon - 1/4 tsp
n Mashed ripe banana
- 1.5 cups

Optional mixings
n Chocolate chips
n Dried cherries
n Cranberries
n Pecans
n Walnuts

Method
n Grease eight inch loaf pans or a 10 inch loaf pan.
n Preheat the oven to 350° F.
n Mix in a bowl — eggs, honey, applesauce, and vanilla.
n Then mix together flour, salt, soda, and cinnamon. Add the wet ingredients.
n Stir the mashed bananas and mix well.
n Add any optional mixings.
n Spread the mixture evenly in the pan and bake for about 45 minutes for two loaves or an hour for one.
